Thanksgiving Cupcakes

Every year for Thanksgiving, we all get 'assignments' on what to bring. Since there are so many of us, it gets kind of interesting as to what we are asked to bring. For example: my cousin Mandy was asked to bring 3 cans of olives. I know, weird. Anyway, for my task: Creative Cupcakes, and yes, that is exactly how it was typed on the email I got. Well, I wasn't able to take a good picture of them before people dug into them, but here's what I did.

Ladies Get Together

This two-tiered cake was for a gathering of former and current Mesa Jr. High teachers at my mom's house. It is a 10in double and 8in double white cake with Raspberry filling, buttercream crumb coated and covered with Marshmallow Fondant.

Birthday Cake Pt.2

Three of my nephews all have birthdays in May. This was made using a Wilton pre-shaped pan and a funfetti cakemix and buttercream.

Birthday Cake

Me, my two sisters, and my sister in law all have birthdays in April. Thus the reason for this cake. This was a 10in round double bottom using Red Velvet and White cake with Vanilla Buttercream and a 6in round double top using Lemon Cake and lemon filling with vanilla buttercream. The embellishments are cut-outs of fondant.

This was my inspiration for the colors that day.

Stacked/Tiered Cakes

This was my attempt at 'stacking'. I made this for our Easter family party and used the same technique with the basket weave and flowers. This was a 8in round double bottom and 6in round double top.

Basket Weave

This was my first attempt at the basket weave and Royal Icing Flowers. This is an oval, two-tiered, coconut cake with coconut filling and almond buttercream. All the flowers (and birds)were piped using Royal Icing (very hard and crunchy).
